Steps:
- Soak and boil salt fish for 15 minutes. Drain and flake into pieces.
- Sauté onion, tomato, Scotch Bonnet, and thyme in coconut oil.
- Add flaked salt fish and cook for 3 minutes.
- Gently fold in drained ackee. Cook 5 minutes until heated through.
- Serve with bammy, boiled green banana, or hard dough bread.

Steps:
- Season oxtail with allspice, thyme, garlic, soy sauce overnight.

- Serve with white rice and steamed vegetables.

Tender goat meat cooked low and slow in a rich Jamaican curry with potatoes and Scotch Bonnet peppers.

Steps:
- Season goat with curry powder, allspice, garlic, thyme, salt.
- Brown goat pieces in hot oil.

Steps:

Steps:
- Boil water. Add dried sorrel, grated ginger, cloves, allspice.
- Cover and steep overnight (8-24 hours).
- Strain through cheesecloth.
- Sweeten with sugar to taste. Chill.
- Serve cold over ice. Add rum for the adults!
